Tonight’s dinner was a total hit — and I might just be obsessed!
🥔 Inside Out Fiesta Stuffed Spuds 🌶️ (aka a Relleno de Papa Remix!)
Tonight’s dinner? Total HIT. 🎉 Juicy ground beef seasoned with YGY Easy Eats Guacamole Spice and Cowboy Salsa, wrapped around tender potatoes, topped with cheese, and baked to bubbly perfection. It’s comfort food… with a bold twist!
✨ Ingredients:
Optional: fresh cilantro or green onions for garnish
4 medium potatoes (pre-cooked)
1 lb ground beef (or turkey)
2 tbsp YGY Easy Eats Guacamole Spice
½ cup veggies (onions, peppers, or your faves), sautéed with Cowboy Salsa
1 cup shredded cheese
Salt & pepper to taste
👩🍳 Directions:
Garnish & serve: Top with cilantro, green onions, or an extra spoon of Cowboy Salsa.
Prep the potatoes: Pre-cook your potatoes (boil, bake, or microwave). Allow them to cool slightly.
Season the meat: In a bowl, mix ground beef with Guacamole Spice until well combined.
Wrap it up: Take a potato and gently wrap the seasoned meat around it—yes, just like a cozy little meatball hug!
Add veggies: Spoon your sautéed veggie and Cowboy Salsa mixture on top.
Cheese, please: Sprinkle generously with shredded cheese.
Bake to perfection: Pop into a 375°F oven for 20–25 minutes, or until the meat is fully cooked and the cheese is melty and golden.
🌟 Dawn’s Tip:
Make it a fiesta! Serve these with a side of fresh salad, avocado slices, or a drizzle of lime crema. Bonus: they reheat beautifully for lunch the next day—if you even have leftovers.
